SPAMALES
Ingredients:
# 1 12-oz. can of SPAM Hot & Spicy, grated
# 1/3 cup onions, chopped
# 1/2 cup pepper-jack cheese, shredded
# 1 Tbsp mayonnaise
# Salt and pepper to taste
# 3 cups of corn masa
# 2 cups water
# Corn Husks
In small bowl, combine grated SPAM, onions, mayonnaise, pepper-jack cheese, salt and pepper; set aside. In a second small bowl, mix together the corn masa and water. Take corn husks and open them up. Apply two tablespoons of batter to the glossy side of the corn husks. Spread the batter to 1/2 inch layer. Stay 2 inches from the bottom of the corn husk. Apply a portion of the SPAM mixture on top of the batter. Fold the tamales sides first, then fold bottom up. Arrange tamales in a steamer standing up. Make sure bottom folds stay tight. Cook for 60 minutes on low to medium steam. Tamales will have a gel look and release clean from the corn husk when done. Discard corn husk before eating. May want to add cheese sauce or chili sauce over the tamales when served.

1 cn Spam, sliced matchstick size
1/4 c Finely chopped ginger root
1 ea Small red onion, finely chopped
1/2 ts Garlic powder
1/4 c Freshly squeezed lime juice
Zest of 1 lime
1/2 ts Oriental dried chili powder
1/4 c Chopped cilantro leaves
8 ea Cherry tomatoes
Thai bird peppers and
Cilantro sprigs to garnish
Combine all ingredients in a sealed glass or plastic container to marinate. Refrigerate at least two hours or preferably overnight.
Stir or shake occasionally to evenly coat. One hour before serving, stir in cilantro. Serve on a bed of torn lettuce of your choice.
Garnish with quartered cherry tomatoes, Thai bird peppers and cilantro sprigs.

Vegetable cooking spray
2 c Frozen corn, thawed
1 cn SPAM Luncheon Meat, cut in -2″ strips (12 oz)
1 Red bell pepper, chopped
1 Green bell pepper, chopped
3/4 c Chopped red onion
1 1/2 c Whipping cream
2 tb Chili powder
1/4 t Pepper
12 oz Angel hair pasta, cooked and drained
2 Tomatoes, peeled and chopped
1/4 c Minced fresh cilantro
In skillet coated with cooking spray, saute corn, SPAM, bell peppers,
and onion over medium heat 5 minutes or until tender. Transfer
mixture to bowl; keep warm. To same skillet, add cream, chili powder,
and pepper. Bring to a boil; boil 5 minutes or until cream has
slightly thickened, stirring occasionally. Pour over pasta and toss
well. Spoon SPAM mixture over pasta. To serve, sprinkle with chopped
tomatoes and cilantro.
